THE CHALLENGE
Creating a premium Viet Fusion model in Brisbane that delivers high-class dining quality but operates with the speed and low labor cost of a fast-casual venue. The menu needed to honour authentic Vietnamese flavors while appealing to the modern Australian palate.
AT INTERVENTION
Designed the entire concept from scratch — brand identity, interior design brief, and menu architecture.
Engineered a menu where every dish is optimized for speed of service (under 8 minutes) while looking and tasting like high-class dining.
Installed an AI-driven POS and inventory system to track every gram of food cost in real-time.
Created a standardized kitchen workflow that can be replicated across future locations with minimal retraining.
